Susan Klucker Back to previous page "I just feel better." For ten years, Susan was a single mom struggling to feed her family. Now married, Susan continues to keep watch on the family budget, but her emphasis has changed to inexpensive ways to eat more healthfully. Susan plans family meals around foods that are on sale at the grocery store and reads food nutrition labels. Susan said she really learned about healthy eating when she began teaching high school students about nutrition. Those lessons have paid off for her family - husband Kurt and children Kolleen, 17, and Dustin, 9. "We have always had an open fruit bowl," Susan says. "(The kids) don't have to ask to eat from the fruit bowl." Susan says her family eats very little meat due to budget restrictions. "We're pasta people and I'm lucky I have a husband who accepts that," she says. Juice, 1% milk or water are the drinks of choice for Susan's family. Susan has made a commitment to physical activity. She walks up hills two nights a week with a group of women. She also walks with her daughter and plays basketball with her son. Santa Maria, CA | |
