Teresa Silva Back to previous page "We eat plenty of vegetables." Teresa's decision to choose healthy eating came with ease since she wanted to keep her family healthy. "We realized that the best thing for us and for our children, for our family, is to become educated in how to eat," she says. Teresa has learned about nutrition through her children's school and from the Expanded Food and Nutrition Education Program (EFNEP). EFNEP offers classes to parents with young children through the University of California Cooperative Extension. Teresa says she no longer fries meats when cooking and she selects the leanest cuts of meats and poultry at the grocery store. Teresa says she worries about her family, including her husband and sons, Omar, 10, and Miguel, 6, because several aunts and uncles suffer from diabetes. "It is said that when we exercise more and eat better foods, we are less prone for developing diabetes and heart attacks." This gives Teresa the motivation to offer healthier foods to her family to prevent future health problems. The Silva family likes to walk and play together. Omar, Miguel, and their father like to fish. Her boys love to be outside. "I want them to exercise a lot," she says. Fresno, CA
